Pesto Frittata by Khashayar Parsi
Measurements of ingredients are according to how many servings you want and how many eggs per serving everyone will want.
- Roast Brussels sprouts, then set aside.
- In a bowl, combine eggs with a little flour to thicken and a little water to smooth out. Season with pesto, salt, and pepper. Consistency should end up slightly thinner than pancake batter.
- Sauté green beans until they’re softened and browned.
- Arrange green beans in a circular pattern on your pan.
- Carefully pour batter over green beans, keeping the beans arranged nicely.
- Cook until eggs are cooked, then flip and cook the other side.
- Plate the frittata and decorate it with the Brussels sprouts.

And go-to recipe: They change from time to time. Right now it is Tikka Masala Paneer. You can also eat it with falafel or other things, it tastes always good, and I usual have all the ingredients at home. Another one is a tortilla triangle filled with all kinds of stuff from the fridge. I think I should stop here, I am getting hungry … 😉
