Zucchini Soup by Khashayar Parsi
- Chop and sauté 1 medium onion and 2 yellow zucchinis until slightly browned.
- Add half a bulb of garlic, salt, black pepper, cayenne pepper, and turmeric and sauté for 5 more minutes.
- Add 1.5 quart of almond milk and cook for 15 minutes or till softened. Then purée.
- Add 2 egg yolks to 0.5 quart of mushroom broth at room temperature, and mix thoroughly.
- Add the broth to soup gradually and while mixing.
- Add 2 julienned zucchinis and cook for 10 minutes.
By itself, I recommend putting a grilled slice of bread with cheese in a bowl and putting the soup over it.

Preparing nourishing food for someone is one of the highest forms of love, at least in my little world. Thanks for sharing this recipe, da-AL!
This morning when I woke, I wondered what to have for a quick snack since I was already hungry. There was leftover plain, steamed basmati rice in my refrigerator, as well as some fresh cilantro stems in a glass of water. I minced the cilantro stems and mixed with the rice, along with a squeeze of fresh lime, Tajin seasoning, and Earth Balance plant-based “butter.”

I viewed a delicious looking picture right here on your post today. But most of my best meals come from restaurants because as my Mom told my sisters when they were complaining I wasn’t doing my fair share of taking care of her in her old age: “No one wants to eat Geoff’s cooking.” Last Sunday I had a delicious Hurricane at Zeke’s Pizza: tomato based with mushrooms, green peppers, red onions, tomato, and black olives.
